Yup, it’s April. And that means ramp season in Appalachia–second only to deer season in November. I’m fortunate to have access to a beautiful patch on a neighbor’s property here in NC. We’ve eaten them twice so far–once with sauteed squash in butter and this week in a cream sauce over pork. That’s how I prefer to eat ramps–as a background note to a dish.
Ramps are a big deal back home. The county library has an annual gourmet ramp dinner to raise funds. (You CAN get your meal without ramps.) And I found this great article complete with a recipe for ramp butter (may have to try that one!).
